hi everyone I'm Emma and welcome to

another recipe lesson at English today

is my brother's birthday and I am making

him a sweet lovely thick rich decadent

dessert that you are going to love as

well today I'm going to show you how to

make chocolate mousse oh yes

chocolate mousse

okay let's have a look at what we need

to make our chocolate mousse we need 200

grams of dark chocolate I've got two

packets here of 100 grams we need some

double cream so this is different to

regular cream that you can buy this is

double cream so it's a bit thicker and a

bit richer than regular cream 2 eggs

some vanilla extract or vanilla pods if

you have them 2 tablespoons of castor

sugar a this is a small amount of butter

that actually we call a knob of butter

so this is a knob of butter we need a

little bit of sea salt just like a pinch

of sea salt and the orange and the

strawberries are for decorating and

serving later so I'll put them aside for

now we need 3 bowls so we have 1 glass

bowl that I'm going to put inside the

saucepan this is where we'll melt our

chocolate I have a smaller Bowl for

whisking the egg whites and this larger

bowl a bit nicer bowl will serve our

chocolate mousse in we also need a whisk

very important when we're whisking our

egg whites and we also need a spatula

all right let's get started we're going

to start with our chocolate and it is

very important that you follow these

instructions when melting chocolate okay

so we need to take our saucepan and put

about an inch of water in the bottom not

too much

so we've got our water in the bottom and

we're going to put our bowl on top so

the bowl shouldn't touch the bottom of

the pan okay so we don't want the bowl

on the bottom of the pan we want it just

at the top of the water we need to break

up our chocolate blocks so you can smash

and bash or break it a little bit more

nicely then we need to put the chocolate

into the saucepan we need to add our

knob of butter and a pinch of our sea

salt now we're going to put our saucepan

and our ingredients on the stove

slowly stir while it melts

while the chocolate is on the stove and

it's melting we're going to get the

cream ready put the cream into the nice

serving bowl the big serving bowl so

that's 300 mils of cream all of it goes

in then add in our sugar so we've got

two tablespoons of castor sugar add that

in and about a teaspoon of the vanilla

extract

then we're going to whisk our

ingredients together with our whisk okay

so we've got a noun and a verb we're

whisking with our whisk let's go

okay there is a trick to the eggs I'm

sure you've done this before I'm not

very good at it but we're going to try

we need our Bowl and I've got just a

second bowl as well to help we need to

separate our eggs okay so we need to

take the yellow part the yolk away from

the white part the egg white I'm not

very good at doing this but we're going

to try anyway so I'm going to collect

the yolk here and the white in here okay

good good good so we just want to throw

it from side to side to try and get all

of the white away from the yolk okay so

now we've got our egg yolk anut egg

whites separate we went to bring our

cream our sugary cream back and add the

yolks and we'll just whisk it in just to

help thicken it up

okay so here's our chocolate it is ready

to go into our cream mixture so let's

get that back over here

alright it's nice and thick we want to

add it slowly to the mix stirring as we

go okay now we don't want to leave any

of that delicious chocolate in there

so try and get as much out as I can stir

it through so it's well mixed

and we'll need to whisk our egg whites

okay so we're done we just want to add

our egg whites these are called soft

peaks you'll often see that in recipes

you want to get your egg whites to be

soft peaks peak like a mountain so

gently fold all of this in together if

you'd like to add a liquor to your

mousse then now is the time to do it so

maybe something like brandy Frangelico

so that is all nicely combined just

flatten it or smooth it across the top

so that it's nice and even okay so

here's our mousse it's looking delicious

that lovely rich thick dark color we're

just going to put it in the fridge for a

few hours to set before it's ready okay

I'm trying really hard not to eat this

before I give it to my brother but it

just looks so good

you've got the lovely bright colors of

the fruit underneath and the rich thick

chocolate on top I need to put that down

otherwise I'm going to eat it I want you

to try this at home
